Strawberry & Pear Tea Cake

 2 cups self-raising flour
 1 tsp bicarbonate soda
 1 cup desiccated coconut
 ¼ cup sugar
 1 cup natural yoghurt
 ¼ cup butter, melted
 2 large eggs, lightly beaten
 1 tsp vanilla bean paste (or extract)
 3 pears, peeled, cored and diced
 1 cup frozen, sliced strawberries

Pre heat oven to 180C and line a 23cm cake pan.

In a large bowl mix together all dry ingredients.

Add the yoghurt, butter, eggs and vanilla and stir to combine.

Fold in the pears and strawberries.

Spoon into your prepared cake pan and bake for 50-60minutes, until golden and a skewer inserted into the cake comes out clean.
